      in the silence
      of the sea
      I settle into iron shells
      like a crustacean
      that is reborn
      into the abyss.

fermentation time up to 30 days, static clarification and tangential filtration.

aged in French oak and untoasted Slavonian oak barrels for 6-8 months.

an intense bright and luminous gold color, a symptom of excellent maturity and great longevity, then translates into the olfactory sensations in the complex and diversified evolution where the ripe yellow pulp fruit prevails, dried apricot wrapped in hints of orange peel held in tension for a long time, with notes of tea and nuts that recall the creaminess of peanut butter.
on the palate it is the triumph of tertiary aromas, previously glimpsed now converge in an elegant and clean sip, soft, broad and generous, that only the freshness, the savoury finish and the aromatic persistence that is found in a botrytized wine, can balance.

      land of riolo

      vineyards of excellence

the vineyards are located on the hills of riolo terme: the native ones of the area such as albana (the first docg in italy) and sangiovese, and the international ones such as merlot and cabernet.

the climate, the position (facing south-west), the characteristics of the soil (clayey in nature, medium texture, rich in limestone and potassium) and the knowledge in viticulture allow the creation of generous, soft and sweet wines, which marry perfectly with the refinement in the bottle of the Tenuta Del Paguro.

      sea of ravenna

      from platform to cellar

the paguro platform, in september 1965, was preparing for the last of its missions: the drilling of the pc7 well to reach a field almost three kilometers deep. it was september 29, when the unexpected happened: the drilling damaged a second field, rich in gas at very high pressure.

today the submerged methane platform has been reborn, transforming itself into an underwater oasis, declared a site of community importance in 1995.

without that unfortunate event, the home of the strangest species in our seas would never have been born, the cradle of the Tenuta Del Paguro wines would never have been born.

since 2008, the first to experiment

what happens to wine under water?

four key factors contribute to its exceptional character.

the total absence of uv rays protects the wine from light-induced alterations, preserving its integrity. a constant temperature of 10-13°c provides a stable and ideal environment for refinement. the increase in pressure at 30 meters depth, from 1 bar during bottling to 4 bar underwater, improves the aging process.
finally, the delicate movement of the tides offers a natural "massage", keeping the wine molecules alive and vibrant, giving life to a one-of-a-kind product.

Emergence occurs after a period of approximately 12 months depending on marine conditions and the season.

only 1,200 bottles per year for the respect and protection of the environment

      a more eco-friendly method

Tenuta Del Paguro adopts a low-impact approach: underwater aging reduces land use, saves energy through natural cooling and preserves marine protected areas, promoting respect for nature and a sustainable future.
